How to make it

  • In a large bowl, stir together yeast, sugar and water.
  • Let stand until bubbly, abot 5-15 minutes.
  • Blend in milk, egg and 1 tablespoon of butter.
  • Add flour and salt.
  • Beat until smooth.
  • Cover and let stand in warm place until almost doubled, about 45 minutes.
  • Brush a heavy bottom frying pan or griddle with butter.
  • Butter the inside of the metal rings.
  • Heat the rings in the pan over low heat, pour about 3 tablespoons of batter into each ring.
  • Cook until holes appear and tops are dry, about 7 minutes.
  • Remove rings and turn crumpets to brown the other side lightly, about 2 minutes.
  • Repeat with remaining batter.
  • Serve warm.
