How to make it

  • In a shallow bowl, combine 3/4 cup of cheese,eggs, flour,parsley, salt, pepper, garlic and milk.
  • With a whisk or electric mixer, beat until smooth.
  • Cover and refrigerate for 20 minutes.
  • Cut zucchini in half crosswise, then into lengthwise slices about 1/4-inch thick.
  • Lightly dust each piece with flour.
  • Heat oil in a frying pan over medium heat.
  • Using a fork, dip each zucchini slice into cheese mixture, thickly coating each side.
  • Place in pan a few pieces at a time, and cook, turning once, until golden brown on both sides.
  • Drain on paper towels and then transfer to serving plate and keep warm until all are cooked.
  • Sprinkle with remaining parmesan cheese and serve.

    I had two lonely zucchini sitting in my refrigerator. I decided to give your recipe a try. I had all the ingredients handy. It was very good and went well with the pasta I made. I would definitely make this again.
