Zucchini Flats

- 2 large zucchini shopping list
- 1 cup grated parmesan cheese shopping list
- 2 eggs shopping list
- 2 tablespoons all-purpose flour shopping list
- 2 tablespoons finely chopped parsley shopping list
- 1 teaspoon salt shopping list
- 1/4-1/2 teaspoon pepper shopping list
- 2 cloves garlic, minced shopping list
- 1/4 cup milk shopping list
- 1/4 cup salad oil shopping list
How to make it
- In a shallow bowl, combine 3/4 cup of cheese,eggs, flour,parsley, salt, pepper, garlic and milk.
- With a whisk or electric mixer, beat until smooth.
- Cover and refrigerate for 20 minutes.
- Cut zucchini in half crosswise, then into lengthwise slices about 1/4-inch thick.
- Lightly dust each piece with flour.
- Heat oil in a frying pan over medium heat.
- Using a fork, dip each zucchini slice into cheese mixture, thickly coating each side.
- Place in pan a few pieces at a time, and cook, turning once, until golden brown on both sides.
- Drain on paper towels and then transfer to serving plate and keep warm until all are cooked.
- Sprinkle with remaining parmesan cheese and serve.
