How to make it

  • Place fish in a broiler pan
  • Blend orange juice with melted butter and pour half over fish
  • Sprinkle with salt and pepper and orange rind
  • Broil for 2 minutes, then pour remaining sauce over top
  • Continue to broil until fish is done (about 10 minutes)
  • If desired, add tomatoes halves during last 4 minutes of cooking
  • A minute before removing from oven, scatter some buttered walnut halves over fish
  • * If fish seems dry, add a little dry white wine
