Orange You Glad Its Fish Recipe
This is a very simple way to put an old twist on just about any type fish. If you are one, like me,who doesn't like the "fishy" taste of fish, then you will probably like this. Give it a spin.

Ingredients
  • 1 1/2 lb. fish fillets of choice
  • 2 T. fresh orange juice
  • 2 T. melted butter or margarine
  • Salt & Pepper
  • 1/2 tsp. grated orange rind
  • Buttered walnut halves
  • * 2 lg. tomatoes, halved, seasoned and buttered (optional)

Directions
  1. Place fish in a broiler pan
  2. Blend orange juice with melted butter and pour half over fish
  3. Sprinkle with salt and pepper and orange rind
  4. Broil for 2 minutes, then pour remaining sauce over top
  5. Continue to broil until fish is done (about 10 minutes)
  6. If desired, add tomatoes halves during last 4 minutes of cooking
  7. A minute before removing from oven, scatter some buttered walnut halves over fish
  8. * If fish seems dry, add a little dry white wine
