Swiss Mushrooms Recipe
This is so versatile. It's great as a stand-alone side dish, served over rice, served over chicken breasts or just spooned over a baked potato.

Ingredients
  • 6 tablespoons butter
  • 2 medium-sized onions, chopped
  • 1-1/2 pounds fresh mushrooms, sliced
  • 1/4 cup sherry
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon white pepper
  • 2 cups shredded swiss cheese
  • paprika

Directions
  1. In a wide frying pan ovr medium heat, melt butter.
  2. Add onions and mushrooms and cook, stirring, until they are soft and the liquid has evaporated.
  3. Stir in sherry, nutmeg and pepper.
  4. Continue stirring for 1 minute.
  5. Pour mixture into a 1-1/2 quart casserole or baking dish.
  6. Let cool slightly.
  7. Sprinkle with the cheese and then paprika.
  8. (You may refrigerate, covered, at this point until ready to use. Just adjust the cooking time accordingly)
  9. Bake, uncovered, at 425° for 10 minutes or until bubbly and heated through.
