Ingredients

How to make it

  • mix dry ingredients in small saucepan
  • gradually stir in cocunt milk (making smooth runny paste)
  • stir constantly over medium heat until it ebgins to thicken
  • reduce heat to low, bring to a aimmer approx. 1 minute
  • pour into lightly greased pan/mold
  • place saran wrap over it (touching the pudding so it doesn't create a "skin")
  • refrigerate approx 5 hours
  • serve with cinnamon or cut-up tropical fruit (papaya, mango, etc)

    I want to try this today, but was wondering if you meant to write 13 1/2 oz of coconut milk instead of 3 1/2 oz, perhaps?

    oh my goodness...creamy and delicious and so easy! One can of coconut milk made 3 desert sized portion and I'm on my second one right now! yummmmmmy warm with ground cinnamon on top! I didn't try molding it but think I will next time. It will be worth the extra effort I think and served with fruit would be a very nice presentation.
