Chicken Twists With Tarragon-avocado Dipping Sauce-tailgater

- 1 lb. boneless and skinless chicken breasts shopping list
- 1 lb. boneless chicken thighs, skinned shopping list
- 1 cup unsifted all-purpose flour shopping list
- 2 to 2 1/2 cups fine dry unseasoned bread crumbs shopping list
- 2 large eggs, beaten with 2 Tbsp. water shopping list
- vegetable oil for deep fat frying shopping list
- Tarragon- avocado Dipping Sauce shopping list
- 1 ripe avocado, pitted, pared and cubed shopping list
- 1 cup sour cream shopping list
- 1/4 cup freshly squeezed lime juice shopping list
- 1 Tbsp. honey shopping list
- 3 Tbsp fresh tarragon leaves or 1 tbsp dried tarragon shopping list
- 1 tsp salt shopping list
- 1/8 tsp pepper shopping list
- Lime slices& spig of tarragon for presentation(optional) shopping list
How to make it
- P lace one piece of chicken between 2 pieces of plastic wrap.
- Using flat side of a meat mallet or a rolling pin, pound chicken lightly until 1/4 in. thick.
- Repeat with all chicken pieces.
- Discard plastic wrap.
- Cut chicken diagonally into strips about 1"x 4".
- Place flour and bread crumbs in separate pie plates
- Put egg mixture in a medium size bowl.
- Coat each chicken strip with flour, shaking off excess; set aside
- Dip floured chicken strips one at a time in egg mixture,then coat with bread crumbs
- Twist each chicken strip gently and place on tray
- Refrigerate 30 min.
- Pour enough veg. oil into a Dutch oven or deep-fat fryer to measure 3 in.
- Heat over moder. high heat until oil registers 365 degrees on a deep- fat thermometer
- Add 5 coated chicken twists to the hot oil; fry until cooked thru and golden brown,approx. 30 seconds
- Remove to paper towels to drain
- Allow oil to return to 365 F
- Fry remaining chicken
- Transfer chicken to tray and refrigerate
- Tarragon-Avocado Dipping Sauce
- In food processor fitted with steel blade, puree avocado,sour cream,lime juice,honey,tarragon,salt and pepper until smooth
- transfer to bowl;cover with plastic wrap
- refrigerate until serving time.
- Place bowl of dip in centerof tray; surround with chicken twists
- Garnish dip with lime slices and a sprig of tarragon
- Makes 10 servings
