  • 1 lb. boneless and skinless chicken breasts
  • 1 lb. boneless chicken thighs, skinned
  • 1 cup unsifted all-purpose flour
  • 2 to 2 1/2 cups fine dry unseasoned bread crumbs
  • 2 large eggs, beaten with 2 Tbsp. water
  • Vegetable oil for deep fat frying
  • Tarragon- Avocado Dipping Sauce
  • 1 ripe avocado, pitted, pared and cubed
  • 1 cup sour cream
  • 1/4 cup freshly squeezed lime juice
  • 1 Tbsp. honey
  • 3 Tbsp fresh tarragon leaves or 1 tbsp dried tarragon
  • 1 tsp salt
  • 1/8 tsp pepper
  • Lime slices& spig of tarragon for presentation(optional)

Directions
  1. P lace one piece of chicken between 2 pieces of plastic wrap.
  2. Using flat side of a meat mallet or a rolling pin, pound chicken lightly until 1/4 in. thick.
  3. Repeat with all chicken pieces.
  4. Discard plastic wrap.
  5. Cut chicken diagonally into strips about 1"x 4".
  6. Place flour and bread crumbs in separate pie plates
  7. Put egg mixture in a medium size bowl.
  8. Coat each chicken strip with flour, shaking off excess; set aside
  9. Dip floured chicken strips one at a time in egg mixture,then coat with bread crumbs
  10. Twist each chicken strip gently and place on tray
  11. Refrigerate 30 min.
  12. Pour enough veg. oil into a Dutch oven or deep-fat fryer to measure 3 in.
  13. Heat over moder. high heat until oil registers 365 degrees on a deep- fat thermometer
  14. Add 5 coated chicken twists to the hot oil; fry until cooked thru and golden brown,approx. 30 seconds
  15. Remove to paper towels to drain
  16. Allow oil to return to 365 F
  17. Fry remaining chicken
  18. Transfer chicken to tray and refrigerate
  19. Tarragon-Avocado Dipping Sauce
  20. In food processor fitted with steel blade, puree avocado,sour cream,lime juice,honey,tarragon,salt and pepper until smooth
  21. transfer to bowl;cover with plastic wrap
  22. refrigerate until serving time.
  23. Place bowl of dip in centerof tray; surround with chicken twists
  24. Garnish dip with lime slices and a sprig of tarragon
  25. Makes 10 servings

These sound fabulous!! can't wait to do them. thank you for posting. 5555555555555 and avocados have monosaturated fat which scarfs up the bad LDL cholesterol.
