Traditional Pa. Dutch recipe.From PA Dutch Cookbook handed down by the early settlers in PA of which my husband is of descent. Great way to use all those green tomatoes!

Ingredients
  • 6 lbs green tomatoes
  • 2 lbs red tomatoes
  • 5 lbs sugar
  • 3 lemons, thinly sliced
  • 1 tsp whole cloves
  • 3 (1 1/2 in. ) pieces ginger root

Directions
  1. Scald the tomatoes, peel, and cut into quarters
  2. Stir in the sugar, lemons, and spices
  3. Bring to boiling and then reduce heat
  4. Cook slowly until mixture thickens.
  5. Pour into hot sterilized jars and seal
  6. About 8 pints.
  7. Some may want to use pressure cooker for canning (10 min.)

Curious about what you mean by "scalding" the tomatoes in step 1? Can you please explain? Thanks!


Place them in a pot of boiling water a few min. and remove. Place them in ice water immediately & the skins will peel right off. Lol
