Chocolate Mousse Cheesecake

- Crust: shopping list
- 3.4C graham cracker crumbs (or chocolate cookie crumbs-or both) shopping list
- 1/4C (1 stick) unsalted butter (softened) shopping list
- 2Tbs sugar shopping list
- _________ shopping list
- Filling: shopping list
- 24oz cream cheese shopping list
- 2 large eggs shopping list
- 1C sugar shopping list
- 8oz semisweet chocolate (melted) shopping list
- 2Tbs heavy cream shopping list
- 7Tbs very strong coffee (espresso) shopping list
- 3/4C sour cream shopping list
- 1tsp dark rum shopping list
How to make it
- Preheat oven to 350
- Crust:
- Place cracker crumbs, butter, and sugar in food processor and whirl a few times to mix. Press into bottom of 8" spring-form mold. Set aside.
- Filling:
- Mix until smooth -Cream cheese, eggs, and sugar in a food processor.
- Add remaining and blend thoroughly. Pour batter ontop of crust.
- Bake 45minutes without opening the oven door. (Will be slightly soft in center, but will firm as it cools)
- At end of baking time, turn off heat and prop open oven door slightly.
- Allow to cool in oven 1 hour.
- Refrigerate.
- Remove at least 15min before serving
