How to make it

  • Preheat oven to 350
  • Crust:
  • Place cracker crumbs, butter, and sugar in food processor and whirl a few times to mix. Press into bottom of 8" spring-form mold. Set aside.
  • Filling:
  • Mix until smooth -Cream cheese, eggs, and sugar in a food processor.
  • Add remaining and blend thoroughly. Pour batter ontop of crust.
  • Bake 45minutes without opening the oven door. (Will be slightly soft in center, but will firm as it cools)
  • At end of baking time, turn off heat and prop open oven door slightly.
  • Allow to cool in oven 1 hour.
  • Refrigerate.
  • Remove at least 15min before serving
