Ingredients
  • Crust:
  • 3.4C graham cracker crumbs (or chocolate cookie crumbs-or both)
  • 1/4C (1 stick) unsalted butter (softened)
  • 2Tbs sugar
  • _________
  • Filling:
  • 24oz cream cheese
  • 2 large eggs
  • 1C sugar
  • 8oz Semisweet chocolate (melted)
  • 2Tbs heavy cream
  • 7Tbs very strong coffee (espresso)
  • 3/4C sour cream
  • 1tsp dark rum

Directions
  1. Preheat oven to 350
  2. Crust:
  3. Place cracker crumbs, butter, and sugar in food processor and whirl a few times to mix. Press into bottom of 8" spring-form mold. Set aside.
  4. Filling:
  5. Mix until smooth -Cream cheese, eggs, and sugar in a food processor.
  6. Add remaining and blend thoroughly. Pour batter ontop of crust.
  7. Bake 45minutes without opening the oven door. (Will be slightly soft in center, but will firm as it cools)
  8. At end of baking time, turn off heat and prop open oven door slightly.
  9. Allow to cool in oven 1 hour.
  10. Refrigerate.
  11. Remove at least 15min before serving
