Durkees Famous Dressing Recipe
I posted a recipe for Durkee Crabmeat casserole and it was pointed out that it's not readily available everywhere anymore. This is how to make a home version of the famous dressing that was created in the late 1800's.

Ingredients
  • 1/2 cup cold water
  • 4 tablespoons corn starch
  • 1/2 cup + 2 tablespoons balsamic vinegar, or other dark vinegar
  • 1/2 cup sugar
  • 1 egg
  • 4 tablespoons mustard
  • 4 tablespoons unsalted butter
  • 2 tablespoons + 2 teaspoons salt

Directions
  1. Put all ingredients, except butter, into a blender.
  2. Blend at high speed for 2 minutes.
  3. Pour into the top of a double boiler.
  4. Cook over gently boiling water, stirring until warmed.
  5. Add butter and stir to incorporate the butter.
  6. Cook an additional 12-15 minutes.
  7. Pour into a jar with a tight-fitting lid.
  8. Bring to room temperature and refrigerate until ready to use.

I live in Missouri and thankfully I can find this dressing here. Originally from California, I wasn't familiar with Durkees Dressing. It's very good in a Chicken Salad recipe I have. That is how I ventured out to find this sauce! I'm going to keep your recipe handy in the event no more will be sold here as well! Thank you!

I grew up in Kansas City, MO and we loved Durkees on all kinds of sandwich meats especially post-Thanksgiving turkey!
