How to make it

  • Preheat oven to 450 degrees
  • Cut squash in half lengthwise; remove & discard seeds.Cut each half crosswise in 1/4-1/2 inch slices
  • Combine squash, onion, oil, honey, wine and vinegar in medium bowl, tossing to coat.
  • Arrange in single layer in shallow pan.
  • Roast 20-25 min., or until tender, stirring once half-way thru
  • Remove from oven
  • Season with salt & pepper; garnish with parsley.
  • Excellent paired with pan- seared salmon

    I tried this squash last night & it was a big hit here. It's quite sweet, but that was a plus with the palates present. I think I'd like to try a savory version with garlic, black pepper & herbs. Thanks so much, I had not thought the skin edible prior to this. Kudos!
