Roasted Delicata Squash with Pan Seared Salmon

- 1 1/2 lbs delicata squash, unpeeled shopping list
- 1 medium ( about 1/2 lb) onion,peeled and cut into match-like sticks shopping list
- 2 Tbsp oil shopping list
- 1 Tbsp honey shopping list
- 1 Tbsp port wine or other red wine shopping list
- 1 Tbsp balsamic vinegar shopping list
- 2 Tbsp chopped parsley shopping list
How to make it
- Preheat oven to 450 degrees
- Cut squash in half lengthwise; remove & discard seeds.Cut each half crosswise in 1/4-1/2 inch slices
- Combine squash, onion, oil, honey, wine and vinegar in medium bowl, tossing to coat.
- Arrange in single layer in shallow pan.
- Roast 20-25 min., or until tender, stirring once half-way thru
- Remove from oven
- Season with salt & pepper; garnish with parsley.
- Excellent paired with pan- seared salmon
