Ingredients
  • 1 refrigerated pie dough, prebaked, blind
  • 8 ounces of lump crab meat, refrigerator pack, drained, picked over
  • 1/2 cup of grated gruyere cheese
  • 1/3 cup of minced shallots
  • 1 tablespoon of chopped fresh parsley
  • 1 tablespoon of fine dry Sherry
  • 1 teaspoon of dried tarragon (two teaspoons of fresh)
  • 3 large eggs slightly beaten
  • 1 cup of half and half
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of nutmeg (4 passes on rasp with whole nutmeg)

Directions
  1. Bake pie shell at 425 degrees for 10 minutes, don't over brown. Cool.
  2. Sprinkle cheese over bottom of pie shell.
  3. Toss crab very lightly with onion, parsley, Sherry and tarragon.
  4. Layer over the cheese.
  5. Beat eggs, mix with half and half, add salt and nutmeg.
  6. Pour over crab mixture very gently.
  7. Bake at 325 degrees for 55 minutes. (put pie pan on cookie sheet in case of spillover. I find it easier to put the pie on the cookie sheet and just fill with the custard mix while it is on the oven rack and slide it back into the oven carefully.)
  8. Let rest 10 mintues before cutting and serving.

Hahahahaha! Cute story, made me laugh and I needed that! Recipe sounds scrum-dilly-icious too, I love, love, love crab meat, and tarragon is just too yummy, so you've got my 5! ;D
