Kase Spaetzel Cheese Noodles Recipe
This was my mom's German version of macaroni & cheese. She used to use a cheese we kids called "smelly" but I can't locate that cheese. My kids love the stringy cheese when they eat this. This recipe doubles /triples easily.

Ingredients
  • 3 tbsp butter
  • 3 onions, sliced
  • 3 oz emmenthaler cheese, grated
  • 1 tsp dry mustard
  • 2 cups homemade spaetzel noodles
  • 2 tbsp chives, chopped

Directions
  1. Heat butter in frying pan, add onions and brown lightly. Toss cheese with dry mustard.
  2. Add cooked noodles to cooked onions and cheese, mix well. Place mixture in an ovenproof casserole. Bake at 300 degrees for 20-30 minutes or until hot and bubbly.
