Pasta Frittata With Goat Cheese And Tomato Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Carson Estate in Mesquite, Texas in 1994.

Ingredients
  • 8 ounces angel hair pasta cooked
  • 8 large eggs beaten to blend
  • 4 large garlic cloves minced
  • 2 tablespoons olive oil
  • 6 ounces soft fresh goat cheese
  • 2 cup chopped peeled seeded tomatoes drained
  • 2 tablespoon balsamic vinegar
  • 1/4 cup chopped fresh basil
  • 3 tablespoon grated parmesan cheese

Directions
  1. Preheat broiler.
  2. Combine first 3 ingredients in bowl then season with salt and pepper.
  3. Heat oil in cast iron skillet medium high heat.
  4. Add pasta mixture and spread evenly then reduce heat to medium and cook 6 minutes.
  5. Cover and cook 4 minutes then transfer skillet to broiler.
  6. Broil for 3 minutes then sprinkle with goat cheese.
  7. Broil until cheese softens about 2 minutes then slide frittata out onto platter.
  8. Combine tomatoes, vinegar and basil then season to taste with salt and pepper.
  9. Top frittata with tomato mixture then sprinkle with Parmesan cheese.
