Blueberry Flax Pancakes Recipe
A light, and fluffy pancake filled with ground flaxseed and blueberries. A perfectly delicious, and incredibly healthy start to your morning.

Ingredients
  • 1 1/2 cups dry pancake mix
  • 1 cup blueberries, fresh or frozen (thawed)
  • 1/2 cup flax seed meal
  • 2 eggs
  • 1 cup skim milk

Directions
  1. Over medium heat, warm a nonstick skillet.
  2. Combine the pancake mix and flax seed meal in a medium sized bowl. Now, in another bowl (or measuring cup), stir together the eggs and milk. Mix the liquid mixture into the dry and stir until the batter is just moistened.
  3. Place 1/4 cup of the batter onto the hot skillet. Top with as many blueberries as you prefer and cook until bubbles form on the surface, then flip and cook until nicely browned on the opposite side.
