BBQ Salmon With Broccolini Recipe

Adapted from a Jamie Olver recipe. This is a simple idea that is quick to prepare and is quite healthy. This dish is topped off with a rosemaryy anchovy sauce.

Ingredients
  • 3 bunches broccolini
  • 4 salmon fillets, approx 1/2lb each
  • for the sauce:
  • 10 anchovies in oil, finely chopped
  • 1 sprig rosemary, leaves picked and chopped
  • extra virgin olive oil
  • juice and zest 1 lemon
  • lemon halves, to serve

Directions
  1. Heat a BBQ over high heat.
  2. For the sauce: combine all ingredients adding enough olive oil to give it a good oozy sauce consistency. Season with pepper and set aside.
  3. Bring a large saucepan of salted water to the boil. Cook broccolini for 3-4mins or until just tender. Drain and toss through about half of the dressing. Keep warm.
  4. Meanwhile, rub the salmon with olive oil and season well. BBQ for 3-4 minutes on each side or until cooked to your liking. Which for my dad is extremely well done and dried out and for my mum is still nice and pink in the middle.
  5. Divide broccolini between the 4 plates. Top each with a piece of salmon and drizzle over remaining sauce.
