Parmesan Crusted Veggies

- 1 to 1-1/2 cups grated parmesan cheese shopping list
- 1 teaspoon grated lemon rind shopping list
- 1 teaspoon parsley shopping list
- 1/2 teaspoon Course ground pepper shopping list
- 2 eggs, beaten shopping list
- Variety of sliced veggies: eggplant, mushrooms, green tomatoes, red peppers, zucchini, yellow summer squash shopping list
- oil for frying shopping list
- fresh lemon juice shopping list
How to make it
- Combine cheese, lemon, parsley and pepper, mix well.
- Heat enough oil for pan frying, not deep frying, about 1/2 cup in a large pan.
- Dip veggies in egg and then press into cheese mixture to coat.
- Fry until golden brown, flipping and browning other side.
- Sprinkle with fresh lemon juice and serve hot.
