What to do with yet another boneless skinless flavorless chicken breast? Why coat it in a yummy mayonnaise and bake it, of course! Amazing coat of many flavors will make the most of the least inspiring chicken part.

Ingredients
  • 6 chicken breast halves, pounded to even thickness but not thin, rubbed with salt and pepper
  • 1 cup of mayonnaise
  • 3 shallots minced
  • 3 garlic cloves minced
  • 6 sprigs of fresh thyme, stripped off the stems
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of grated lime rind

Directions
  1. Pound the chicken breasts to an even thickness.
  2. Liberally rub with salt and pepper.
  3. Combine remaining ingredients and coat both sides of the breasts.
  4. Let marinate for at least two hours.
  5. Preheat the oven to 350 degrees.
  6. Place chicken on foil lined baking sheets and bake for 25 minutes.
  7. If you want them crispier looking, run them under the broiler for a couple of minutes.

Garlic and shallots - yep, that does it for me, and the cumin and thyme clinches it. This will devoured, I'm sure!
