Katmandu Chicken

- 1 T. oil shopping list
- 2 onions, halved and sliced vertically shopping list
- 1/2 tsp. ground turmeric shopping list
- 4 skinless, boneless chicken breasts or thighs, cut into bite-size pieces shopping list
- 4 garlic cloves, sliced shopping list
- 1 tsp. ground cumin shopping list
- 1 tsp. ground coriander shopping list
- 1 lg. very ripe tomato, chopped (ore use canned) shopping list
- 2 chili peppers, halved, seeded and sliced shopping list
- 1/2 cup hot water shopping list
- salt to taste shopping list
- 1/3 cup fresh cilantro, chopped shopping list
- 2 cups cooked basmati rice or long grain rice shopping list
How to make it
- Heat oil. Add onions and turmeric and saut・~ until onions are very soft, about 15 minutes. raise heat, add chicken and brow slightly. Add garlic, cumin, coriander, tomatoes and peppers. Stir together. Add hot water and salt; simmer over low heat until chicken is tender, stirring occasionally. Add cilantro and cook just a few minutes longer. Serve over rice.
