Rigatoni With Goat Cheese Recipe
A very good rigatoni dish that can have lot's of topping variations. I've included a few. I'm sure you can find the perfect topping for your taste.

Ingredients
  • 1 pound rigatoni
  • Salt and pepper
  • 1 1/2 cups crumbled goat cheese
  • 1/2 cup finely grated Parmesan cheese
  • Topping Variations:
  • 1/4 cup slivered sun-dried tomatoes, toasted pine nuts, chopped or torn herbs, or pitted, sliced black olives , or blue cheese stuffed olives .Crisp pancetta or your favorite bacon!

Directions
  1. 1. Cook rigatoni in a large pot of boiling salted water until al dente, according to package directions; drain, reserving 1/2 cup cooking water.
  2. 2. Return pasta to pot, and toss with goat cheese and Parmesan. Season with salt and pepper, and add some of the reserved pasta water as desired. Sprinkle with preferred topping, and serve.

Hmm, mouth watering.think i'll go to my kitchen and cook something for lunch :-) and, my compliments to the cook, adding the pasta water unfortunately is not used by many but makes for a better taste!


This looks great... I have a feeling I'd top it with sun-dried tomatoes AND toasted pine nuts AND herbs, maybe olives, too. Even though I just ate a nice, filling meal, I am getting a little hungry reading the recipe :) Thank you for sharing it!

I am going to make this and add some sweet Italian sausage, with some fresh basil.
