How to make it

  • 1. Cook rigatoni in a large pot of boiling salted water until al dente, according to package directions; drain, reserving 1/2 cup cooking water.
  • 2. Return pasta to pot, and toss with goat cheese and Parmesan. Season with salt and pepper, and add some of the reserved pasta water as desired. Sprinkle with preferred topping, and serve.

    This looks great... I have a feeling I'd top it with sun-dried tomatoes AND toasted pine nuts AND herbs, maybe olives, too. Even though I just ate a nice, filling meal, I am getting a little hungry reading the recipe :) Thank you for sharing it!

    hmm, mouth watering.think i'll go to my kitchen and cook something for lunch :-) and, my compliments to the cook, adding the pasta water unfortunately is not used by many but makes for a better taste!
