Ingredients
  • Bottom:
  • 1 C plus 2 Tb butter, softened
  • 3/4 C plus 2 Tb packed brown sugar
  • 2 1/2 C flour
  • 1 3/4 tsp salt
  • Topping:
  • 1 pkg butterscotch chips
  • 1/2 C plus 2 Tb light corn syrup
  • 3 Tb butter
  • 2 Tsp water
  • 2 1/2 C salted cashew halves

Directions
  1. In large bowl, cream butter and brown sugar for bottom.
  2. Combine flour and salt and add to creamed mixture.
  3. Press into a greased 15x10x1 pan and bake at 350 for 10-12 minutes. - Should be lightly browned.
  4. Combine chips, corn syrup, butter and water in a sauce pan.
  5. Stir over medium heat until melted.
  6. Spread over crust.
  7. Sprinkle on cashews and press down lightly.
  8. Bake for approx. 12 minutes or until bubbly and lightly browned.
  9. Cool and cut.

Ohhhhh this sounds good! Have you ever tried substituting chocolate chips for the butterscotch chips? Or tried using both? This recipe sounds really great and thank you for posting it here for all of us to see!
