City Chicken Recipe
My mom made city chicken when I was growing up. I finally found a recipe that is close to what she made.

Ingredients
  • 3/4 pound Pork, boneless loin, cut into 3/4" cubes
  • 3/4 pound Veal, boneless loin, cut into 3/4" cubes
  • Bamboo skewers
  • 1 1/2 cup Flour
  • Salt and pepper and powdered garlic
  • 1 Egg, lightly beaten
  • 1 cup Milk
  • Oil for frying

Directions
  1. Alternate veal and pork cubes on short bamboo skewers. Heat about 1/3 inch of oil in a heavy skillet over medium heat.
  2. Season the flour with salt and pepper and garlic. Whisk together the
  3. egg and milk. Dip the "chicken" first in the seasoned flour, then the egg/milk mix and back in the seasoned flour.
  4. Add to the hot oil and cook until browned on all sides. Drain on paper towels.
  5. 4 Servings

OMG! City Chicken! You must be from around the Pittsburgh area. My mom's "recipe" uses crackermeal in place of the flour and NO garlic! That was too exotic for MY mom! Good memories. Now if you have a recipe for ham loaf or ham salad then I KNOW you have Pittsburgh roots!


MMMMMMMMM so glad i found this recipe. I miss Pittsburgh so much. Usually make a Primanti style sandwich when I'm 'homesick'. Now I have 2 truly Pittsburgh foods to make.
