I got this recipe out of my Taste without waist cookbook. I added and changed a few things. I was very pleased with the way these muffins turned out. My kids gobbled them up! They are very tasty and filling!

Ingredients
  • 6 tbsp margarine
  • 3/4 cup sugar
  • 2 eggs or egg substitute equivalent
  • 1 tsp vanilla
  • 1 tbsp apple juice
  • 2 cups flour( I used 1 1/2 cups of white flour and 1/2 cup of whole wheat flour)
  • 1 cup oat bran
  • 1 cup wheteena ( I did not have this ingred. on hand so I used 1 1/2 cups of the oat bran and 1/2 cup of oatmeal)
  • 1 tbsp cinnamon
  • 2 tsp all spice
  • 1 tsp cloves
  • 1 tsp. salt
  • 2 tsps soda
  • 1 (24 ounce) jar unsweetened applesauce ( I used the homestyle version)

Directions
  1. Preheat oven to 400*
  2. Cream margarine and sugar.
  3. Add eggs, vanilla, and apple juice.
  4. Mix well
  5. Combine dry ingredients.
  6. Add soda to applesauce.
  7. Add dry ingredients alternatley with applesauce
  8. Stir until blended
  9. Fill greased muffin tins 2/3 full.
  10. Bake 10 minutes.
  11. Variation:Add dates, raisins, or nuts to the batter.
  12. This recipe makes a large quantity, but batter will keep in the refriferator for 3 weeks.
