Ingredients
  • 4 fresh whole rainbow trout, cleaned boned & butterflied (8 oz ea)
  • 3/4 stick butter, melted
  • 1 T freshly chopped tarragon
  • 1 tsp dried parsley
  • 1 1/2 tsp tarragon vinegar
  • spray oil

Directions
  1. preheat oven to 420
  2. spray a baking sheet with non-stick spray
  3. Mix butter, tarragon, parsley & vinegar and place fish in bowl for 30 minutes.
  4. Place trout skin side down and opened on the baking sheet.
  5. Sprinkle w/salt & pepper.
  6. brush with butter mixture.
  7. Bake appx. 8 minutes until opaque in the center.
  8. Serve immediatley.
