Kentucky Banana Pudding Recipe
A wonderful version of an old family favorite made with a cookie crust!

Ingredients
  • 4 banana, cut into slices
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1/4 cup cornstarch
  • 1 (12 fl. oz) can of evaporated milk
  • 1 1/2 cups milk
  • 1 beaten egg, beaten
  • 1 (12 oz) box of vanilla wafers

Directions
  1. Combine the sugar, cornstarch, and both the evaporated and regular milk in a saucepan over a medium heat. Stir well and mix until thickened. Remove mixture from the heat, then add vanilla, and mix thoroughly.
  2. Place a layer of cookies in a large bowl or casserole dish. Pour the pudding mixture on top of the cookies and garnish with a layer of the sliced bananas. Place in the refrigerator until chilled.

I made this today, but you forgot to mention when to add the egg. I added it after the milk, cornstarch mixture had heated to the small bubble stage then added some of the warm milk to the beaten egg. Beat the egg cream mixture together. Add slowly to the cream mixture. Continue to whisk until the custard thickens. About 160*F.


This was very good. It wasn't overly sweet which was nice, yet it had a delicious flavor to it. Everyone at our dinner party wanted seconds and the recipe!
