Citralian Chicken

- 2 boneless skinless chicken breasts shopping list
- 1 egg shopping list
- 1 cup of flour shopping list
- 1 cup Italian flavored breadcrumbs shopping list
- 1/2 tsp garlic powder shopping list
- 4 tablespoons of milk shopping list
- 2 tablespoons butter or margarine shopping list
- Canola or vegetable oil (for frying) shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon white or black pepper shopping list
- lemon juice (fresh if possible or bottled is ok) shopping list
- ¼ cup parmesan cheese shopping list
- parmesan cheese for sprinkling at the end shopping list
How to make it
- Combine breadcrumbs, salt, pepper, garlic powder and Parmesan cheese in one bag and mix well and place flour in the other bag (you can also use the plate method rather than zipper bags)
- Filet 2 chicken breasts in half
- Pound breasts until flat (approx. ¼ inch), coat with flour mixture, dip in egg and milk mixture, coat with combined breadcrumb, garlic etc. mixture
- let sit 5 minutes
- Place butter in pan and use enough oil to coat a skillet large enough to accomodate the chicjen to ½ the thickness of the chicken and set on high
- Heat oil and butter til the oil shimmers
- Place chicken breasts in pan for approx 2-3 minutes (until golden brown)
- Turn over and repeat
- Remove from pan and place on paper towels.
- Immediately sprinkle 1-1/2 teaspoons lemon juice on each piece.
- Sprinkle with Parmesan cheese.
- Garnish with whatever floats your boat (parsley, scallions, cilantro etc)
