Straw And Hay Recipe
Italians call a combination of green and white noodles "straw and hay". This is my low fat version.

Ingredients
  • 1 cup low fat milk
  • 1/2 cup low fat cottage cheese
  • 2 teaspoons cornstarch
  • 1/4 teaspoon ground mace
  • 1/8 teaspoon ground black pepper
  • 4 ounces uncooked fettuccine noodles
  • 4 ounces uncooked spinach fettuccine noodles
  • 4 ounces deli-style ham, diagonally sliced
  • 2 tablespoons freshly chopped chives
  • 1 cup frozen peas, thawed and drained
  • 1/2 cup grated parmesan cheese
  • 1/8 teaspoon paprika

Directions
  1. Combine milk, cottage cheese, cornstarch, mace and black pepper in a blender.
  2. Process until smooth and set aside.
  3. Cook noodles according to package directions, omitting the salt.
  4. Drain and set aside.
  5. Spray a large non-stick skillet with nonstick cooking spray.
  6. Cook and stir ham and chives over medium heat until ham is lightly browned.
  7. Stir in milk mixture and peas.
  8. Cook until thickened.
  9. Combine noodles and milk mixture in a large bowl.
  10. Add parmesan cheese.
  11. Toss to coat evenly.
  12. Sprinkle with paprika and serve immediately.

Always nice to cut down on some fat and calories - this sounds very tasty, and I don't think I'd miss the fat in this. Nice post!
