Mountain Chili

- 1 pound boneless beef sirloin steak, cut into 3/4-inch cubes shopping list
- 4 italian sausage links, casings removed and cut into 3/4 inch slices shopping list
- 2 tablespoons olive oil, divided shopping list
- 1 onion, chopped shopping list
- 3 garlic cloves, minced shopping list
- 2 green onions, thinly sliced shopping list
- 2 teaspoons beef bouillion granules shopping list
- 1 cup boiling water shopping list
- 1/4 cup red wine shopping list
- 1-6 ounce can tomato paste shopping list
- 3 tablespoons chili powder shopping list
- 2 tablespoons brown sugar shopping list
- 2 tablespoons worcestershire sauce shopping list
- 2 teaspoons ground cumin shopping list
- 1-2 teaspoons crushed red pepper flakes shopping list
- salt to taste, not a lot though shopping list
- pepper to taste shopping list
- 3 cans, 14.5 ounces each, stewed tomatoes, cut up shopping list
- 2 15 ounce cans pinto beans, rinsed and drained shopping list
- 1 pound shredded sharp cheddar cheese shopping list
- sour cream shopping list
- rice or potatoes to pour it over shopping list
How to make it
- In a large skillet, brown the beef and sausage in 1 tablespoon of oil.
- Drain.
- Transfer meat to a 5-quart slow cooker.
- In the same skillet you cooked the beef, saute the onion, garlic and green onions in remaining oil until tender.
- Transfer to the slow cooker.
- In a small bowl, dissolve bouillon in water.
- Stir in wine, tomato paste, chili powder, brown sugar, Worcestershire sauce and seasonings until blended.
- Add to slow cooker.
- Stir tomatoes and beans into slow cooker.
- Cover and cook on high for 6-8 hours.
- Serve over potatoes or rice and garnish with cheese and sour cream.
