Justin Wilson was my hero on PBS, I watched him religiously. I was so happy to run across this recipe. I Gaarrunnteee you'll like mudbugs this way. Remember how his belly would shake when he would stir his etouffee.

Ingredients
  • 4 Boxes salt (no size mentioned)
  • 2 whole heads of garlic
  • 6 Pouches crab boil
  • 9 Lemons
  • 8 oz Cayenne pepper
  • 5 lb Small white onions
  • 24 small red potatoes
  • smoked sausage links
  • fresh corn
  • 50 lb Live crawfish

Directions
  1. Bring seasonings to boil for 10 minutes. (I use my turkey fryer with a basket insert over a propane fire.)
  2. While the seasonings are boiling, peel the onions and prep the potatoes (scrub), shuck the corn.
  3. Add potatoes, corn, and smoked sausage. Boil for another 10 minutes. Add crawfish. Bring back to boil.
  4. Cut fire off immediately. Let soak for 20 to 30 minutes. Drain. Peel and eat.
  5. Hint: While water is coming to a boil, cull and clean crawfish. Rinse well with garden hose and remove any dead ones.
  6. Always wear gloves when you fool with crawfish, but remember, they can still pinch you through gloves. Justin Wilson writes, "Not everybody likes the fat, but I do, and I love to dig my finger into the head and scoop it out. During crawfish season, my finger stays yellow from one end to the other."   7. Serve with cold beer and on some Zydeco music and let the good times roll.

I also loved Justin Wilson, my dad and I never missed his show. I taped a lot of them, and have some of his cookbooks.Thanks for the post, I will have to get out his books and look up some good recipes.
