Seafood And Noodle Casserole Recipe
Not like the usual tuna casserole. A nice change of pace. I found this recipe in a dollar store pasta cook book.

Ingredients
  • 8 ounces egg noodles
  • salt and ground black pepper
  • 1/2 cup frozen peas
  • 1 onion, coarsley chopped
  • 1 can crabmeat, drained and flaked
  • 8 ounces shrimp, peeled and deveined
  • 1 (8 ounce) can sliced water chestnuts, drained
  • 1/2 cup mayonnaise
  • 1/2 cup tomato juice
  • 1/2 cup clam juice or seafood stock
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup sliced almonds

Directions
  1. Cook noodles in boiling salted water 5 minutes. Add peas and onion and cook an additional 3 minutes. Drain.
  2. In bowl, combine pasta mixture with crab, shrimp and water chestnuts.
  3. Whisk together mayonnaise, tomato juice and clam juice or seafood stock. Add to noodles and stir gently.
  4. Transfer to casserole.
  5. Sprinkle with cheddar cheese and almonds.
  6. Bake at 375 degrees for 35 to 35 minutes or until top is browned and shrimp have turned pink.
