Ingredients
  • MARINADE---
  • Juice of 1 orange
  • 3 tbs rice wine vinegar
  • 2 tbs reduced sodium soy sauce
  • 2 tbs olive oil
  • 1 small red or green chile pepper, thinly sliced
  • 1 tbs grated ginger
  • SALMON---
  • 4 salmon fillets
  • 1/8 tsp kosher salt
  • 1/8 tsp pepper
  • 2 tsp olive oil
  • 2 tbs cilantro leaves

Directions
  1. In a shallow glass dish, combine all marinade ingredients. Add salmon and turn to coat. Cover and marinate in refrigerator 30 min. Remove salmon from marinade, reserve marinade. Sprinkle salmon with salt and pepper.
  2. Heat oil in a skillet. Add salmon skin side down and cook 4 min. Turn salmon and cook 4 min. or until just opaque in center. Transfer salmon to a platter. Cover loosely with foil and keep warm. Discard any drippings from skillet, add marinade and cook until thickened and syrupy. Drizzle glaze over salmon and sprinkle with cilantro.
