This is comfort food that is quick and delicious! My family has loved this and I enjoy making the potatoes as a side dish because of the great flavor and texture along with the bright, cheerful color. =D

Ingredients
  • 1 1/2 pounds small red potatoes
  • 1 T. olive oil
  • 4 t. finely minced garlic
  • 3/4 t. coarse salt
  • 1/2 t. paprika
  • 1/4 t. freshly ground pepper

Directions
  1. Preheat oven to 525 degrees. Quarter potatoes and place in a large bowl. Drizzle ( I love that word) olive oil over potatoes and toss.
  2. Sprinkle garlic, salt paprika and pepper over potatoes; toss to coat well.
  3. Line a baking sheet with foil and lightly spray with vegetable cooking spray. Arrange potatoes on prepared baking sheet. Roast for 20 minutes, stirring once or twice during cooking.
  4. Raise heat to broil. Broil potatoes until crisp, watching closely not to over-brown, about 1-2 minutes. Yum! :D
