Easy Parmesan Orzo Recipe
This is a favorite side dish of ours - lovely with fish or chicken. Very easy to make. I've had this for awhile so don't remember the original source (probably "Cooking Light").

Ingredients
  • 1 tablespoon butter
  • 1 cup orzo
  • 1 1/4 cups fat-free, less-sodium chicken broth
  • 1 1/4 cups water
  • 1/4 cup (1 ounce) grated fresh Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 teaspoons pine nuts, toasted

Directions
  1. Heat butter in a medium saucepan over medium heat.
  2. Add orzo, and cook 3 minutes, stirring constantly.
  3. Stir in broth and water; bring to a boil.
  4. Reduce heat, and simmer until liquid is absorbed and orzo is done (about 15 minutes).
  5. Remove from heat; stir in cheese, basil, salt, and pepper.
  6. Sprinkle with the pine nuts.
  7. Serve immediately.

Love those little orzo noodles, I put them in my veggie soup. Going to give this recipe a try, it sounds good. Great post, thanks.


Sounds tasty, and not too difficult - love the flavor combination...I've never made orzo at home, but I will be trying it now!


Do the pine nuts make too big of a difference? it's the only thing i don't have and i want to make this tonight.
