Penne With Raisins And Pine Nuts Recipe
garam masala and raisins add a very yummy, unique twist to standard penne pasta, for extra healthy version, use whole wheat penne (you can't really tell a difference)

Ingredients
  • 2 T olive oil
  • 2 cloves garlic, crushed (more if you like garlic, they end up sweet)
  • 2 medium brown/ yellow onions, finely chopped
  • 1 cinnamon stick or 1 t ground cinnamon
  • 2 t ground cumin
  • 2 t ground coriander
  • 1 t garam marsala (available in Indian/ ethnic food aisle)
  • 310g (one can) chickpeas, drained & rinsed
  • 250g (one pint) cherry or grape tomatoes, halved
  • 1/3 cup raisins
  • 1/3 cup olive oil or 1/6 cup oil and 1/6 cup of the pasta water
  • 500g or 1 lb penne pasta
  • 1/3 c pine nuts, toasted
  • 1/4 c shredded fresh basil leaves

Directions
  1. Heat oil in large saucepan; cook onion till softened (about 5 min), add garlic, cook one min more, stir in spiced, cook till fragrant
  2. add chickpeas, tomato, raisins, and extra oil (or oil/ H2O combo); stir until combined and heated through
  3. add penne to separate pot of boiling water and cook as directed for al dente, drain
  4. combine penne and sauce in large bowl; sprinkle with nuts and basil
  5. enjoy!

This sounds so yummy! Would it make much difference if I left out or substituted the chickpeas for something else? I love beans of all kinds just not chickpeas.Thanks for the post!

No, but I think something like a Navy bean would be too buttery. You could replace it with chicken (seasoned w/ s&p only). Enjoy!
