penne with raisins and pine nuts

- 2 T olive oil shopping list
- 2 cloves garlic, crushed (more if you like garlic, they end up sweet) shopping list
- 2 medium brown/ yellow onions, finely chopped shopping list
- 1 cinnamon stick or 1 t ground cinnamon shopping list
- 2 t ground cumin shopping list
- 2 t ground coriander shopping list
- 1 t garam marsala (available in Indian/ ethnic food aisle) shopping list
- 310g (one can) chickpeas, drained & rinsed shopping list
- 250g (one pint) cherry or grape tomatoes, halved shopping list
- 1/3 cup raisins shopping list
- 1/3 cup olive oil or 1/6 cup oil and 1/6 cup of the pasta water shopping list
- 500g or 1 lb penne pasta shopping list
- 1/3 c pine nuts, toasted shopping list
- 1/4 c shredded fresh basil leaves shopping list
How to make it
- Heat oil in large saucepan; cook onion till softened (about 5 min), add garlic, cook one min more, stir in spiced, cook till fragrant
- add chickpeas, tomato, raisins, and extra oil (or oil/ H2O combo); stir until combined and heated through
- add penne to separate pot of boiling water and cook as directed for al dente, drain
- combine penne and sauce in large bowl; sprinkle with nuts and basil
