How to make it

  • Heat large skillet over high to medium-high heat. Brown the beef roast on all sides.
  • Make a layer of onions on the bottom of the Crock-pot. Sprinkle in some carrots, and a couple cloves of garlic.
  • Place the browned roast on vegetables in the Crock-pot.
  • Fill Crock-pot with remaining veggies (don't pack too full), starting with onions, then potatoes, and remaining carrots and garlic.
  • Pour cream-of mushroom soup (or liquid of your choice) over roast and veggies (don't worry if it doesn't seem like enough liquid, it will melt and the meat and veggies will give up liquid).
  • Make sure Crock-pot lid is on tightly, cover and cook for 8-10 hours on low. Meat should be falling apart and veggies cooked through.

    I made it this week. In my version I use 1 can mushroom soup and 1 package dry onion soup mix and
    1/2 soup can water or red wine. The meat is very tender and the gravy is good!

    hi ok the dish was delic! and in half the time. even my 4 yr old daughter who wont eat an meat (except chicken nuggets0 tried the roast and liked it. we ate the left overs for lunch today! and my 1 year old grubbed it! with my famouse mashers it was great (see my recipe)

    ok i am trying this now. I just put it in my crock pot but my variation is one beef broth can and one merlot-cab wine can. (same can as the broth) and i am not ading the potatoes i am going to make mashed! trying it on high for 4 hrs. since im running out of time! i will let you know how it is!

    It's been 8 hours and I just turned the crock pot up to high, because the meat is not even close to tender yet. Followed the recipe exactly- next time I will set on high instead, maybe my crock pot is slower than yours, Ambauer!
