Pumpkin cake Amish recipe

- 4 eggs, well beaten shopping list
- 2 cups sugar shopping list
- 1 1/2 cups vegetable oil shopping list
- 3 cups flour shopping list
- 3 teaspoons baking powder shopping list
- 2 teaspoon cinnamon shopping list
- 2 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon ginger shopping list
- 2 cups pumpkin, can is fine. shopping list
- 1 cup walnuts, chopped shopping list
How to make it
- To the beaten eggs add the sugar and blend well, Beat in oil
- Add the dry ingredients and pumpkin and mix thoroughly. Stir in walnuts by hand
- Pour batter into well greased and floured 9 x 13 baking pan or 2 round 9" pans.
- Bake at 350 for 45-60 minutes (test center with pick to be sure cake is fully baked)
- Frost with my butter cream icing:
- cook until thick and cool completely
- 1 cup of milk
- 5 tablespoons of flour
- in another bowl cream 1/2 pound sweet butter(2 sticks)
- with 8 ounces cream cheese
- add 1 cup confectioners sugar or more if needed. I dont like it sweet so adjust to your taste
- add cooked pudding mix
- add 2 teaspoons of vanilla
- add more 10 if needed to make it light and fluffy.
- You can add super drained pineapple if you wish.
- I use this butter cream for so many things. Cream cheese is an addition for this recipe only.
