Ingredients

How to make it

  • To the beaten eggs add the sugar and blend well, Beat in oil
  • Add the dry ingredients and pumpkin and mix thoroughly. Stir in walnuts by hand
  • Pour batter into well greased and floured 9 x 13 baking pan or 2 round 9" pans.
  • Bake at 350 for 45-60 minutes (test center with pick to be sure cake is fully baked)
  • Frost with my butter cream icing:
  • cook until thick and cool completely
  • 1 cup of milk
  • 5 tablespoons of flour
  • in another bowl cream 1/2 pound sweet butter(2 sticks)
  • with 8 ounces cream cheese
  • add 1 cup confectioners sugar or more if needed. I dont like it sweet so adjust to your taste
  • add cooked pudding mix
  • add 2 teaspoons of vanilla
  • add more 10 if needed to make it light and fluffy.
  • You can add super drained pineapple if you wish.
  • I use this butter cream for so many things. Cream cheese is an addition for this recipe only.

    Volumetrically this was HUGE! You weren't kidding! My daughter decided to make 2. She sifted everything and it was large. And tastewise this was bigger than huge! OMG it was soooooo good. Got home late from court last night and grabbed a piece with milk. She used her cream frosting on it and I took a hunk to court today. Everyone that tried it (defense attorney, ada, judge, court reporter, court officers and my partner) fell in love with it and I just finished emailing the recipe to those same people. Came home and the rest is gone:( her friends were over and devoured it. Trial is now over and I had to get in here to let you know. Tell your son I said stay safe and God Bless him from blue to blue.

    You said pumpkin and Amish in the same sentence and got my daughters attention (mine too I am a sucker for anything pumpkin). Have to work late tomorrow night on a trial and she promises it will be waiting for me when I get home. Will let you know how she and my tummy makes out!
