How to make it

  • 350 oven spray and flour bread pan
  • Mix zucchini, sugar, oil and egg whites in large bowl
  • Stir in remaing ingredients except apricots. Stir in apricots
  • Bake about an hour to an hour and 10 minutes or until
  • A toothpick inserted in center comes out clean.
  • Cool 10 minutes: remove from pan.
  • Cool completely on wire rack before slicing.
  • Serve with cream cheese
  • 1 loaf (24 slices)
  • 80 calories per slice
