Zucchini Apricot Bread

- 1 medium zucchini, shredded (1 ½ Cups) shopping list
- ¼ C sugar shopping list
- ¼ C oil shopping list
- 3 egg whites or ½ C cholesterol free egg product shopping list
- 1 ½ C all purpose flour shopping list
- 1 tsp cinnamon shopping list
- 2 tsp vanilla shopping list
- ¾ tsp baking soda shopping list
- ½ tsp salt shopping list
- ¼ tsp baking powder shopping list
- ¼ tsp cloves shopping list
- 1/2 C finely chopped dried apricots shopping list
How to make it
- 350 oven spray and flour bread pan
- Mix zucchini, sugar, oil and egg whites in large bowl
- Stir in remaing ingredients except apricots. Stir in apricots
- Bake about an hour to an hour and 10 minutes or until
- A toothpick inserted in center comes out clean.
- Cool 10 minutes: remove from pan.
- Cool completely on wire rack before slicing.
- Serve with cream cheese
- 1 loaf (24 slices)
- 80 calories per slice
