A first class dessert that always impresses every one at the table. Make sure that your guests are waiting for the soufflé because when ready and high, it must be served right away.

Ingredients
  • Short 2 cups pastry cream
  • 3 egg whites + 1 pinch of salt
  • 3 tbsps Grand Marnier liqueur
  • 2 tbsps granulated sugar
  • 2 tbls butter

Directions
  1. Coat four 6 oz ramekins with butter and dust with granulated sugar. Turn them over to remove excess sugar.
  2. Whip the egg whites with a pinch of salt until soft peaks form.
  3. In a larger bowl, mix the pastry cream and Grand Marnier together; slowly fold the egg whites into the pastry cream mixture.
  4. Fill prepared ramekins and bake in oven at 500°F for 15-20 minutes.
  5. Remove from oven, dust with icing sugar and serve immediately
