Greek Eggplant Dip

- 6 round eggplant shopping list
- 3 cloves garlic. shopping list
- onion to taste shopping list
- olive oil. shopping list
- lemon juice. shopping list
- Kosher or grey salt and pepper. shopping list
- parsley. shopping list
How to make it
- Prick the eggplant with a fork and bake them in a hot oven.
- When they are soft, cool them and peel them carefully.
- Chop the eggplant and put them through a blender until they become a pulp.
- Gradually add the onion, garlic, parsley and lemon juice to this mixture and continue blending until it becomes soft.
- Season to taste.
