This recipe is from the Cofiat Taverna in Greece. It is different from others I have made and has a very special flavor all its' own. I enjoyed it, but then aubergines are one of my favorite foods..

Ingredients
  • 6 round eggplant
  • 3 cloves garlic.
  • Onion to taste
  • Olive oil.
  • Lemon juice.
  • Kosher or grey Salt and pepper.
  • Parsley.

Directions
  1. Prick the eggplant with a fork and bake them in a hot oven.
  2. When they are soft, cool them and peel them carefully.
  3. Chop the eggplant and put them through a blender until they become a pulp.
  4. Gradually add the onion, garlic, parsley and lemon juice to this mixture and continue blending until it becomes soft.
  5. Season to taste.

Do not add garlic and parsley, and blend with canola oil and 1 tsp of mayonnaise. Very good dip.


I like garlic and parsley and do not use canola oil....you changed it to an entirely different recipe.You changed everything but the eggplant!


The olive oil, lemon and garlic bring out the Mediterranean feeling for this Greek Eggplant Dip.
