How to make it

  • Prick the eggplant with a fork and bake them in a hot oven.
  • When they are soft, cool them and peel them carefully.
  • Chop the eggplant and put them through a blender until they become a pulp.
  • Gradually add the onion, garlic, parsley and lemon juice to this mixture and continue blending until it becomes soft.
  • Season to taste.

    I like garlic and parsley and do not use canola oil....you changed it to an entirely different recipe.You changed everything but the eggplant!

    do not add garlic and parsley, and blend with canola oil and 1 tsp of mayonnaise. Very good dip.
