How to make it

  • Preheat oven to 375 F,position oven rack in center.
  • Crust:
  • Sieve the flour in a bowl.Cut in the butter in small pieces and rub in with your fingers till it resembles fine breadcrumbs.
  • Stir in the sugar.Add enough water to mix a soft dough,then cover and chill 15 minutes.
  • Roll out pastry on a lightly floured surface and use to line 18 mini tartlet pans.Prick the bases with a toothpick.
  • Filling:
  • Beat together the cheese and the sugar.Beat in the egg for 1 minute.
  • Melt the chocolate and beat it into the mixture.Spoon in the pastry cases.
  • Bake for 15-18 minutes till the filling is set and the pastry is crisp to the touch.Cool.
  • Decoration:
  • Whip the cream till stiff peaks,place it in a piping bag fitted with a star nozzle.Pip rosettes on top of each tartlet and dust with cocoa or chocolate curls.Chill
