Portugese Style Scallops Recipe

Ingredients
  • 1 ½ lbs sea scallops
  • ½ t salt
  • ¼ t pepper
  • 1 T olive oil, divided
  • 1/3 C tawny port or other sweet red wine
  • 2 T lemon juice
  • ¼ C chopped fresh parsley (or died parsley flakes)
  • 5 garlic cloves, minced

Directions
  1. Sprinkle scallops with salt and pepper
  2. Heat a heavy pan on high (med high) until very hot
  3. Add 1 ½ tsp oil and half of the scallops; cook about 2 minutes each side or until browned
  4. Remove and keep warm, cook remaining scallops, remove and keep warm
  5. Add port and lemon juice, deglaze pan removing small bits with spoon
  6. Add garlic and parsley to pan and cook 30 seconds, return scallops to pan and combine with garlic and parsley
  7. Yield: 4 servings

Interesting. Scallops with port. I bet the lomon balances the two flavors perfectly.


Fascinating. I've probably made scallops a hundred differendt ways, but port and lemon. Sound perfecto.
