Ingredients

How to make it

  • Sprinkle scallops with salt and pepper
  • Heat a heavy pan on high (med high) until very hot
  • Add 1 ½ tsp oil and half of the scallops; cook about 2 minutes each side or until browned
  • Remove and keep warm, cook remaining scallops, remove and keep warm
  • Add port and lemon juice, deglaze pan removing small bits with spoon
  • Add garlic and parsley to pan and cook 30 seconds, return scallops to pan and combine with garlic and parsley
  • Yield: 4 servings
