Fresh Peach Salsa Recipe
All I can say about this recipe is be prepared to eat yourself sick on it. I find it very addicting and absolutely cannot get enough of it. It's good on it's own, but even better over chicken or fish. Enjoy

Ingredients
  • 3 cup ripe peaches
  • 1 cup yellow pepper
  • 1 cup red pepper
  • 1/2 cup tomatillos
  • 1/3 cup green onion stalks
  • 1 teaspoon jalapeño finely chopped
  • 4 ounce can diced mild green chilies
  • 2 fresh limes
  • 2 tablespoons lucas acidito*
  • 1 teaspoon cayenne pepper
  • 1 tablespoon sugar

Directions
  1. *Lucas Acidito is a Mexican spice that can be found in the Mexican food aisle of your grocery store.
  2. If unavailable, use a mixture of salt, chili powder, and a bit of sugar.
  3. Remove seeds from peppers.
  4. Dice red and yellow peppers, tomatillos, green onions and jalepeño into small bits and combine in large mixing bowl.
  5. Add can of green chiles.
  6. Squeeze juice from limes over mixture then stir well to coat with juice.
  7. Peel and slice peaches into chunks and add to mixture.
  8. Stir well.
  9. Season with Acidito, cayenne pepper and sugar.
  10. Serve immediately with tortilla chips or use as a topping for grilled fish or pork or for fish tacos.
  11. Keeps in tightly covered container in refrigerator for up to two days.

This DOES sound addicting!


I tried this recipe this past weekend and it was a hit -very refreshing. The only problem I had was locating the Lucas Acidito. I didn't realize the Lucas part was only the brand name and it appears this brand has been discontinued in my area. I even went to a Latino market and they didn't have it, but now I know to only ask for any acidito. I used the combo of chili powder, sugar & salt as recommended and it tasted great, but I would like to try it again using a true acidito.


We made this today and it was *great*! We ended up with a not quite ripe tomatillo, though, so that threw the taste a tiny bit if you got a chunk of that, however, even so, it was fantastic. We, too, could not find the Acidito, so used the chili pepper substitute. We'll definitely be making it again!
