How to make it

  • Peel and finely chop the cucumber. Add salt and let it sit in a strainer 30-45 minutes til most of the liquid is drained off.
  • Chop the tomatoes, you should have roughly an equal amount of tomatoes and cucumbers. Drain in strainer/colander.
  • Finely chop the onion.
  • Combine the remaining ingredients.
  • Chill an hour or so before serving.

    I do this one a lot because I am on a diet, so I know it is delicious! Sometimes I sub the vinegar with itlian dressing.

    This is such a simple recipe. When I first made it, I didn't have the balsamic vinegar in it and something was missing. Once I added that, it was right. You could use cider vinegar as well, but the balsamic has so much flavor that it enhances the flavors of the tomatoes and the cucumbers.
