Monterey Jack Rice Recipe
this super easy yummy baked rice dish is a nice substitute for spanish rice easily doubles or even triples great at social gatherings like church suppers where it will simply vanish.

Ingredients
  • 2 cups of sour cream
  • 1 cup prepared white rice
  • 1 2 oz can diced green chilies
  • 1 cup shredded monterey jack cheese
  • optional for those who love it really hot 1 hot pepper of choice finely chopped

Directions
  1. preheat oven to 350 degrees
  2. mix all ingredients except the cheese together
  3. layer with rice and then cheese repeating with cheese as last layer in a 1and1/2 quart ungreased baking dish
  4. bake for 15 minutes until golden brown

A local grocery going out of business had blocks of a milder pepper jack cheese on sale at almost giveaway prices last week so I made some of this for our crew's last big get together before the major holidays, to go with grilled steaks using the pepper jack yesterday. Oh my goodness it was so yummy with the steaks a nice change from baked potatoes family loved it
