Chicken Pomeroy Recipe
This is a great dish to make for friends. I usually double it , add mashed potatoes, home made bread and a salad and have a great couples dinner with friends.

Ingredients
  • Ingredients:
  • 4 skinless boneless chicken breast halves
  • 4 Tbsp Butter
  • ___ Garlic
  • 1/3 C finely chopped shallots
  • 1/2 C dry white wine
  • 3 Tbsp whole grain Dijon mustard
  • 3/4 C whipping cream
  • 2 ½ Tbsp chopped fresh tarragon or rosemary
  • 2 Tbsp capers
  • 1 Can Artichoke hearts

Directions
  1. Melt butter in heavy large skillet over medium-high heat.
  2. Add chicken breasts and sauté until cooked through, about 5 minutes per side
  3. Transfer chicken to platter. Tent with aluminum foil to keep warm
  4. Add shallots and garlic to same skillet and sauté 1 minute.
  5. Add white wine and mustard and bring to simmer.
  6. Add cream and 1 ½ Tbsp tarragon (or rosemary), artichokes and capers.
  7. Simmer until slightly thickened, stirring often, about 3 minutes.
  8. Return chicken and any accumulated juices to skillet.
  9. Simmer until chicken is heated through, about 1 minute.
  10. Transfer chicken and sauce to platter.
  11. Sprinkle with remaining 1 Tbsp tarragon or rosemary and serve.

I have all the ingredients in the frig..will be on the table tonight. I love tarragon and artichokes and cream. This well certainly give our meal a boost. YUM.
