Zimbawbe Greens Recipe
This is a dish served at an international dinner party I just attended. The host serve this and the African Moo Sate. Both recipes were a huge hit and loved by all. I know I had to have the recipe for both. Yummy

Ingredients
  • 5 green onions sliced
  • 1 bunch collard greens, washed
  • 1 cup water
  • 3 tablespoons natural smooth peanut butter
  • 1 large tomato cored and chopped
  • 1 teaspoon salt

Directions
  1. Finely shred greens discarding tough stems.
  2. Place in a saucepan with water.
  3. Bring to boil and cook stirring occasionally just until greens are crunchy tender.
  4. Drain greens reserving liquid.
  5. Return greens to medium heat then add tomato and onions.
  6. Heat through stirring frequently.
  7. Thin peanut butter with 3/4 cup of the reserved cooking liquid then add to vegetables. Heat stirring constantly until greens have a creamy consistency.
  8. Add more reserved liquid if mixture seems too thick.
  9. Season with salt and serve immediately.

Made this last evening. Very tasty, easy to make, and healthy too. Great on brown rice. The leftovers warmed up very nicely for lunch today. It's great to have a new way to make greens. I'm looking forward to trying it with a few hot pepper flakes.


I have a ton of greens in my CSA box, so I'm going to give this a try tonight.
