Easy Cheesy Beefy Noodles

Spicy and meaty additions make classic macaroni and cheese a full meal!
Ingredients
- 1 lb lean ground beef shopping list
- 12 oz medium egg noodles, cooked according to package directions. shopping list
- 1 lb Velveeta cheese, cubed shopping list
- 1 can rotel diced tomatoes and green chilies (we use original rotel, but you may also use mild if serving kids, or extra hot rotel for the spice lovers) shopping list
How to make it
- Preheat oven to 350F. Place cubed Velveeta cheese and Rotel tomatoes in microwave safe dish, and microwave on full power 5 minutes, or until cheese is fully melted; mix well. Crumble ground beef into skillet and cook over medium high heat until fully cooked through; drain fat. Cook egg noodles according to package directions, drain, and place in ovenproof casserole dish. Add ground beef and melted cheese and Rotel mixture; mix well. Cover, and bake 30 minutes. Serve immediately.
