Meister House Grits Casserole Recipe
Don't tell anyone these are grits! Unless you are a southerner you don't know how wonderful this staple of breakfast can be. Can be prepared the night before - and refrigerated before the baking step.

Ingredients
  • 1 cup quick coooking grits
  • 2 cups chicken broth
  • 2 cups milk
  • 1 pound breakfast sausage - cooked and fat drained off
  • 2 teaspoons season salt
  • 2 cups shredded cheddar cheese
  • 1/4 cup butter
  • 3 beaten eggs
  • OPTIONAL: 4 ounce can chopped green chili

Directions
  1. Preheat oven to 375 degrees.
  2. Grease or spray with cooking spray - 13 x 9 inch baking dish
  3. In medium sized saucepan, bring milk, broth and salt to boil and stir in grits. Cook grits over lowered heat, stirring occasionally ntil grits are thickened but not stiff.
  4. Turn off heat, and whisk in cheese, butter, cooked sausage, then add beaten eggs. OPTIONAL - add green chili at this point.
  5. Bake in prepared baking dish for 45 minutes or until slightly puffed and browned on top.
  6. NOTE: use quick cooking grits not instant and no matter what cooking directions are given on the box - use half broth and half milk.

This has quickly become one of my favorite breakfast dishes to make for company. My mother loved it so much much when I made it for Christmas last year she asked me to make it for New Years Eve dinner this year along with sausage gravy. I love it and it is great as a leftover.
