Hawaiian Meatballs

- 1 egg shopping list
- 1/2 c. bread crumbs shopping list
- 1/4 c. finely chopped onion shopping list
- 1 tsp. worcestire sauce shopping list
- 1 tsp. salt shopping list
- 1/8 tsp. fresh ground black pepper shopping list
- 1 garlic clove, minced shopping list
- 1 lb. ground beef shopping list
- 1 - 20oz. can pineapple chunks, drained, reserving juice shopping list
- 1/3 c. water shopping list
- 3 Tbs. cider vinegar shopping list
- 1 Tbs. soy sauce shopping list
- 1/2 c. brown sugar, packed shopping list
- 3 Tbs. corn starch shopping list
- 1 lrg. green pepper, cut into 1 inch pieces shopping list
- 1 lrg. sweet onion, chopped into 1 inch pieces shopping list
- 2 carrots, peeled and sliced on the diagonal shopping list
- 1/4 c. maraschino cherries shopping list
How to make it
- For the Meatballs: Preheat the oven to 400 degrees. Spray a baking sheet with non-stick cooking spray.
- In a large bowl, mix together the egg, bread crumbs, 1/4 c. onion, worcestire sauce, salt, pepper, garlic, and ground beef. Form into 1 inch balls and place on the baking sheet.
- Bake at 400 for 15 minutes.
- For the sauce: In a large pot, pour the reserved pineapple juice, water, vinegar, soy sauce, sugar, and cornstarch. Stir until smooth.
- Cook over medium heat till thick and clear, stirring constantly.
- Add the meatballs, onion, pepper, carrots, pineapple, and cherries.
- Simmer over low heat, uncovered, for 20 minutes.
- Serve over hot cooked rice.
