Ingredients
  • 1 egg
  • 1/2 c. bread crumbs
  • 1/4 c. finely chopped onion
  • 1 tsp. worcestire sauce
  • 1 tsp. salt
  • 1/8 tsp. fresh ground black pepper
  • 1 garlic clove, minced
  • 1 lb. ground beef
  • 1 - 20oz. can pineapple chunks, drained, reserving juice
  • 1/3 c. water
  • 3 Tbs. cider vinegar
  • 1 Tbs. soy sauce
  • 1/2 c. brown sugar, packed
  • 3 Tbs. corn starch
  • 1 lrg. green pepper, cut into 1 inch pieces
  • 1 lrg. sweet onion, chopped into 1 inch pieces
  • 2 carrots, peeled and sliced on the diagonal
  • 1/4 c. maraschino cherries

Directions
  1. For the Meatballs: Preheat the oven to 400 degrees. Spray a baking sheet with non-stick cooking spray.
  2. In a large bowl, mix together the egg, bread crumbs, 1/4 c. onion, worcestire sauce, salt, pepper, garlic, and ground beef. Form into 1 inch balls and place on the baking sheet.
  3. Bake at 400 for 15 minutes.
  4. For the sauce: In a large pot, pour the reserved pineapple juice, water, vinegar, soy sauce, sugar, and cornstarch. Stir until smooth.
  5. Cook over medium heat till thick and clear, stirring constantly.
  6. Add the meatballs, onion, pepper, carrots, pineapple, and cherries.
  7. Simmer over low heat, uncovered, for 20 minutes.
  8. Serve over hot cooked rice.

Hi Ali, I sure hope you still check in here because I just finished making these fabulous meatballs & I would like to tell you that this recipe is incredible. Just the meatballs alone taste delicious & anytime I make meatballs for any meal, this will be the recipe I will use. The recipe made 64 small meatballs. We have a potluck at work next week & I will be making up another batch to take with me & I'm sure everyone will want the recipe. Thank you for this great recipe.
