How to make it

  • Break up cauliflower heads and place in small baking dish.
  • Drizzle olive oil over cauliflower and sprinkle with salt.
  • Toss until cauliflower is covered.
  • Bake at 400 degrees for 30 min.
  • Toss cauliflower half way through baking time to keep it from drying out.

    I liked this way to prepare cauliflower, and will probably eat more of it now. One question: it took 45 minutes for my cauliflower to become soft. Are you eating yours slightly crunchy, or do I need to make the pieces smaller? (I roasted it in my toaster oven, if that makes a difference.)

    I will try this tonight. I love roasted veggies. Invisible chef is right that steaming is a bit healthier, but I am really tired of eating steamed veggies all of the time. After forty years of steaming veggies, roasting is a nice break!

    Melsa, I made this for supper last night, and the dish was practically licked clean! All 4 of us loved it, and decided this will be THE way to fix cauliflower from now on - not only healthier without all the butter and cheese I usually use, but the rich flavor of the veggie was predominant for once (unlike when it is smothered in other ingredients!). Thanks for a great new recipe for us - I hope everyone tries it...it's delish!!
    PS - I DID sprinkly about 2 TB of grated sharp cheddar over the veggie just before serving... isn't necessary, but some of us wanted the hint of cheese, so this was perfect!

    I have to try this - I love roasted veggies, but I've never tried it with cauliflower (like you, I usually just pile on the cheese or butter)...this sounds much healtier and very tasty - thanks!
