Cranberry Cordial Recipe
I make this every year for the Christmas Holidays.. Some for us and some for gifts..just remember to make it at least 1 month before the holidays.The recipe is from The Fancy Pantry. a cookbook I would dearly love to own but don't.

Ingredients
  • 3 1/2 - 4 cups ( 12 oz. pkt) fresh cranberries
  • 2 cups sugar more if needed
  • 4 cups good vodka

Directions
  1. divide cranberries and the sugar into 2 batches
  2. put first batch of cranberries and sugar into a food processor and coursely chop
  3. do second batch
  4. put mixture into a large jar that has a tight lid approx 2 quart size or divide into 2 one quart jars
  5. stir in vodka and cap tightly. set aside at room temp.
  6. shake or stir at least once a week for 1 month
  7. strain thru a fine mesh sieve lined with 2 layers of dampened cheese cloth
  8. squeeze out as much liqid as possible. discard pulp
  9. If you want more sweetness and body:
  10. boil together 1/2 cup sugar and 1/4 cup water for 2 mins.
  11. cool and add to cordial
  12. pour into clean bottles. leave behind any sediment . cap or cork
  13. store at room temp.
  14. any cloudiness that may form at the bottom of the bottle is harmless
